Secret Supper: White Fir

 

For the White Fir Secret Supper, we wanted to embody the Danish concept of "hygge" -- coziness, contentment and conviviality -- in both food and environment.

The supper was held held in December at The Colony St. Johns, an historic gem boasting dark, gleaming wood, several fireplaces and gorgeous floor to ceiling windows.

Guests were greeted with warm glögg from Bull in China before being invited to a sumptuously set longtable gleaming with cut crystal and candlelight. We drew inspiration from Nordic cuisine, starting guests with aquavit cured and cedar planked salmon served with beetroot tartare and a smoked oyster and salsify cream.

Next we served whole roast cauliflower on a bed of rye berries, mushrooms, cabbage and dill. The final course was flæskesteg, a Danish pork roast traditionally served at Christmastime. Truly glorious with its crackling crust scented with bay, we complemented the roast with a red berry sauce and hasselback potatoes with brown butter, nutmeg and sage.

Guests glowed in the candlelight as they savored Christiann Koepke's divinely moist and delicious Nordic almond cake with black currant and rose jam. A prosecco toast was made to a lovely young couple who had married amongst their nearest and dearest only hours before. Their first dance gave way to a spontaneous dance party with strangers who had become friends through the course of the evening.
